Did sell my closeted-since-going-BenelliM2 Beretta A400 Xtreme last year, young guy looking for his first big time duck gun got a great deal on a like-new gun that I was just keeping around waiting on the M2 to let me down. Figured the cash better suited to any potential needs for boat or bike or other gear that's actually in use.

Won't ever part with my Beretta AL390 for clays and doves, super sweet. Wish I had it in a 20 also

Keep you posted on when we might meet half way.....unless you want to come down to Lafayette area and we'll go shoot some sporting clays, you can bring that new rig you got. Know of any other sporting clays places that are more like half-way?

I always shoot in one clays event for sure each year in late August at Dry Creek Ranch, you should come this year.

Don’t know any plans to be around Lafayette anytime soon, but let me know next time you head north.

I think she'd probably like to try some white-fronted goose. Never know she might cook em the best.

Have a ton of Asian honey customers. Viet Nam, Korea, China, Thailand etc.
Champaign-Urbana is multi-cultural as hell. The grade school down the street has 7 flags. One from every nation a student is from.
Every time I make a sale to an Asian I'm kicking myself for not trying to get a duck recipe.
I imagine that they would know some tasty duck recipes maybe even with honey in it.

Funny you say that I sent her a pic of some smoked speck and she said it looked like raw meat..... deep fried speck breast nuggets might be a better option.

Never had speck. I HAD shot some but one day the land-owner showed up wanting duck meat for a big party. They gave all my ducks and geese from the season to him and then told me as the guy was leaving. Hunted an entire season at "club-x" then took that long ride home (talking to myself) and not one duck or goose.

You tend to remember something like that #!$% forever.
Whole season's ducks gone just like that.
You don't forget when someone burns your waders either. You just can't.
They had a pretty big fire with like 8 pairs and mine got into the mix.
I think it was intentional. They had big frowns when I pulled out my spare pair.
Al Cahol was involved.

Well...they had a couple big stock pots they kept in the 2nd fridge.
They had a guide fridge and the one everyone else used.
Those two pots tended to get full quick because about half the clients were just shooters.
I was the duck-cleaning guy so I ended up with whatever nobody wanted.

We're talking about close to 3 gallons of meat.

The freezer: I used it but for what I called "taxidermy birds". One day this hot blonde taxidermist showed up asking for specimens.
Gave her it all including a juvee snow goose that was perfectomundo.
I think that's what it was. Juvee snows are the ones with fancy feathers right?
I shot it so I could look at it close. Once I had it in hand I decided "no way am I destroying this one". Wonder where it ended up.
Those birds are beautiful.

Haha good. I pluck all my teal too. I breast the big ducks and leave skin on for frying but I pluck the legs. Takes a little time but I love making a duck or speck leg gravy.

The last time I was there they had one of them pellet smokers. A Traeger.
The teal piece that Rainman gave me was delicious.
If you don't have one it's actually worth owning.

Ok.
2.5 cups all-purpose flour
i cup + 1 Tablespoon warm water. (110F is right)
1 tsp yeast
1 tsp sugar
1.5 tsp salt
1 Tablespoon oil

If you're in a hurry just cook it but if you want a better crust form your pizza crust (it makes two)
I use a rolling pin and flour on a board. Then fold the dough and lay in on your "peel"or a cookie sheet that's been dusted heavy with corn meal so it won't stick. Cover with plastic wrap or a towel for 45 minutes, build your pizza and cook it.

I've posted this picture quite a few times. Forgive me I'm proud of "packaw's pizza".

New potatoes with garden beans and some smoke pork is what we're dreaming of. Planted mine around St Patricks day but they haven't emerged yet. Give it two or three weeks and I'll be howing up the mounds and before you know it it's July and digemup time.

Planted about 1000 sq ft of taters. White, yellow, and red. If I was smart I'd plant the blue ones and have red,white, n blue new taters for the 4th.

Planting everything else today. 4 varieties of cherry tomatoes and 3 varieties of regular tomatoes. Various colors....makes for a pretty salad.

Tricia is handling the squash, eggplant, and cucumbers.
