I'll just post it here.

Pre heat oil to 375 deg. I cut pheasant legs at the joint, separating the thigh and drumstick. Use cajun season and garlic powder over the legs, then cover with flour, then add to the hot grease. Cook on both sides to get good color, do not burn or overcook, when done remove and place on paper towels. Add a couple tbsp of white wine to deglaze pan, then add a couple handfuls of mushrooms, crushed garlic, and onions may also be added now. Sautee for 2-3 minutes, then add 1/2=3/4 cup white wine. Bring to a slight boil for 4-5 minutes. Add a few tbsp of flour while mixing, when it starts to thicken add a 1/2 cup or so of milk while mixing. After 2-3 minutes add pheasant back to pan , reduce heat to med-low and cover. When phez is cooked all the way through, enjoy.

Thanks! What oil are you using? Just plain Jane olive oil?

Curious to see how that works with duck, always thought of them as a red wine or balsamic vinegar meat. A good long sous vide cooking would prob be the way to do it, would help out with the way duck likes to turn any sauce bloody when grilled or fried. Definitely keep us updated.

Exactly, hot ass skillet. Then use that oil to start the sauce.
