See, that's why I asked. Yes, I am doing ribs. Maybe I'll do one with mustard and one without, just to see.

Nope. I've done that before, and I don't care for the taste. Granted, I've never done it on the smoker, but I wasn't real pleased with the taste. I'm not a huge fan of apples.

We just spray them occasionally towards the end to keep them moist, never really tasted it (apple) when it it was done either

I've never done that- I actually soaked them in apple juice for a couple hours beforehand, and didn't like it. The wife and kids did, but I didn't. And they got vetoed when it comes to doing that again.

I put a light coat of mustart on my ribs from time to time. Can't really tell any difference, I am more or less using it to hold the actual rub on and ensure a nice bark. Also slather brisket and pork butts with mustard as well, again more to help hold the rub on the bottom.

Thats what we do. We cover the butt/brisket in mustard and it never tastes like it. It seems to help hold mositure, but really just holds the rub.

How were the temps on your trial run?
it maintained a good temp for quite a while. But i haven't put on a thermometer yet though do don't know what they were. I also didn't have my nipples, caps and ball valve installed at the time. So it burned hot and fast. Imagine it'll cool much longer with them in now

Thank you sir. Did I give you the rub for the brisket as well? They work pretty good together.

Just read the whole build assa did. I'm building one. PIsses me off I got a free barrel last year but made a fire pit out of it instead. It was a barrel that held the junk that they poured for tennis courts. Think that "burns" out like everything else?
