Key is indirect grilling at first, then when the fat is rendered down enough, direct grilling to get just a little char. About the same as doing duck poppers.

It's looking like this is it for tonight.

Will put 1/2#of smoked sausage, 1/2# breakfast sausage, a can of rotel, and a little bit of onion, celery, and green pepper.

Yes. Its the best IMO. We use the Italian in spaghetti and on pizza but hot for jumbalaya. They have mild, Italian, and hot.

Remembered I made smoked pork yesterday so I cut up some of that and threw it in. Awww man dats good.
The heat from the rotel is perfect...
