For hamburgers. It's ok in chili and whatnot, but not my favorite. I figure hamburger's the cheapest meat to buy, so why would I take the most expensive meat to buy, steaks and roasts, and make burger out of it? Never made sense to me.

We use ground up deer in chili. That's it.
Process my own deer and don't grind up much. I make jerky. By the time I'm done there is not one bit of meat on the carcass. Other hunters gasp when they see one and say they have never seen a carcass completely clean like that. Maybe it's just me but I'm greedy when it comes to jerky. Will get every tiny little scrap of meat.

Mix it with 50% beef trim in the grind. Makes it go further for cheap, gives it a little fat content, and the big kicker - makes it so my wife will actually eat it.

We grind our venison pure deer. If it tastes bad then you aren't getting all the fat off the deer before you grind it up or you're cooking it too long. I'll fry up some venison burger with some Mrs. Dash and eat it straight. Way better than anything I've ever had with beef burger.
