On subject of smoking. I urge you all to try smoking brats.
Don't grill them at all. Cook on the smoker-side with no direct heat. (by the chimney)
It takes about 45 minutes to an hour. Don't turn 'em or anything. Just go drink beer for 45 minutes. (seriously)
At the end I slide the brats over towards the firebox for the last 4-5 minutes.
They come off all spittin and mad sounding. Kinda puffed up.
Let them sit on a plate a few minutes and they settle down, shrink, and the casing turns into something that "snaps" when you bite.
TRY IT!!!!You will never cook brats any other way after you do them in a smoker. They are super juicy and have little smoke rings inside too. Cool! I didn't even really like brats that much until I started cooking them on the smoker.
