Most go to our pluckers, but some take them home to clean themselves. Years ago, the big cheese thought it would be nice if the guides cleaned them, so he could collect a cleaning fee, but I said "No way." "But then the other guides won't want to clean them, either," says he. "Oh, well."

I actually kind of enjoy cleaning birds for our house, but only in relatively small batches. Scald and pick all but a few that get skinned for gumbo or filleted for the grill, and I like knowing exactly how they were handled from field to freezer. But if I had to pluck everything my parties shot, I'd do my hunting down the road.
