You're livin' the dream brother! Did you make gar balls with the gar meat off that big gar? I cleaned one a few years ago, and was impressed with the quality of the meat, but the gel like substance between the layers made me realize why it is ground up for balls. The meat itself was damn good, just had to eat a layer, pull the layer of gel, and move on to the next layer.

Aw ya love me some hot gar patties.one reason I look forward to summer cuz the big gar bite a whole lot better.we where tryin to catch blue cats but ended up catching 6 gar and all that size

I want to know how you process them. I damn near stuck a knife through my hand last summer when I tried.

Stick a nail through very end of tail and get you a pair of pliers and a cane nice or machete and grab very back dorsal fin and take off skin with machete with chopping action like peeling a banana till you get to the head, should be a strip of skin missing down the middle as wide as you can without tearing meat up.then fillet out meat like cutting the backstrap out of a deer going around the rib cage

You could peel it with a hatchet, if you preferred, or by beating on the back of a big, old butcher knife.

Pretty sure my Creole SIL and your new boss at Oak Grove, Mike, won the gar division at a rodeo down there last year.

Gar always tasted extra fishy to me. Not worth anything but selling. Dressed out and in steaks, I get $7 a pound. At that price it's hard to want to keep em. I hang em on a rebar hook I made and hull em out without problems.

What I've had has been all over the board. I've had roast in a simple white gravy that was unbelievably mild and tasty and ground patties so strong no amount of onions or red pepper could save them.

I've just had the ground patties that were strong. Also tried some carp sausage from down y'alls way. Horrible, absolutely horrible. Smelled so strong I could only take one bite and even then had to spit it out.

Back when I was pretty heavy into running nets I used to sale a lot of buffalo and catfish to someone down that way. They'd come up in a refrigerated food truck once a week, sold a lot of turtles too.

The only reference I've heard to buffalo for human consumption was a fellow here who hauled them to Houston for, if memory serves, and it might not, orientals.

But when I was got out of the service and was deciding "what next?" I spoke with a fellow looking for a young partner (slave who actually paid to be that) in the wholesale carp business in Northern Ohio. He sold them to someone in New York City for gefilte fish.

Buffalo is a good eating fish. The ribs on em is where it's at. Really white, flaky, neutral tasting fish.
