Yesterdays roosters are in the crockpot - slow cooking in: a large can of cream of mushroom soup, mushrooms, chopped onion, and garlic. Gonna eat it over rice.

OK this is what ill be eating for my lunch the next few days. I used to make stuff like this all the time and take to work and leave it so i had lunch all week long. Since im off work today, figured i get some made and not have to worry about lunch for the rest of the week. The original recipe called it Cowboy casserole, but its basically Fridge casserole. The base indgredients are usally about the same but you can add or subtract as you wish, depends on what direction you want to take it.
Ingredient list:
Bacon, ground beef, diced onion, diced green pepper, diced jalapeno, can of diced tomatoes with green chiles, can of pork&beans or baked beans, garlic, cheese, rice, potatoes of sort, beer, ketchup, mustard, bbq sauce, sriacha hot sauce and cornbread mix.

Cook bacon and beef-drain liquid, and set aside

Add a little olive oil to the pan and add onion and pepper-cook until tender

Add tomatoes, beans, rice, potatoes and beer

Meanwhile mix up cornbread mix and add diced jalapenos

mix in beef and bacon to mix along with ketchup, mustard and BBq sauce.

Pour into baking pan, pour cornbread mix over top, place a few jalapenos on top of cornbread and cover with cheese.

Bake at 400 until cornbread is browned.
Image

Serve with sour cream and/or more BBQ sauce and a beer or three.

The great thing is you can make it to your tast by taking something out or adding stuff, pulled pork and potatoes is a great combo too.

Fine looking meal there although if I ate that for lunch I wouldn't be able to get any work done the rest of the day

I eat lunch very late in my day, so I usually only have a couple hours after lunch, I can usually zombie my way through those last couple hours!

It's chocolate, pecans, brown sugar, sugar, butter, eggs and vanilla. There are a lot of different was of making it though. You can put bourbon in it if you want. It is was invented in KY and names after the derby and that's the only state I know of that you can get it unless you make it your self.

My mom makes it all the time. Bourbon is not optional tho. It's what makes the flavor.

In my house the bourbon is optional. We put it in if we have it in the house.
