I always eat braunschweiger as a kid and I wanted to find a use for the liver and heart from deer. So I copied a recipe for the spices of Liverwurst and adapted it to use deer with some pork fat. SO here you have German Liverworst make wit 1 deer hear, 1 deer liver, 2# ground deer meat and 2# pig fat.
