Which of these three shot patterns do you think is best?
First two are same 3" load from the same gun with different chokes

I'm no expert, but I'd say #2. Of the three, its definitely the one I'd want to be shooting.

Draw a 30" circle around 2 and 3 so we can tell better. Definitely not pic 1
