I assume they are as easy to skin as a rabbit but what do they taste like? Really.

Squirrels like their skin. If you don't do it right they are the biggest PITA animal to skin. They taste delicious though.

I love eating wild animals, prefer wild game over farm raised any day but I'm not eating a squirrel.

Really? Have you ever tried it? I'll guarantee you'll change your mind. 10x better than any small game or waterfowl. They rival grouse and pheasant.

I don't really know how to explain it. Doesn't really taste like other game. I guess the closed I could compare it to is rabbit crossed with beef. But with no fat.

Unless your slow cooking make sure you boil for 1-2 hours first.

They are a pain in the ass to skin, but compared to coyotes they aint nothing.

The skin doesn't pull as easy but it still pulls off. Not hard to do. If your not selling them, then it should be real easy to skin.
I think they are good to eat also . They can be a little chewy though.

They aren't hard if you do it right. But the skin does not come off easy. More times than not I gut them and skin them at the same time because the belly muscles stay with the skin.

The hardest part is cleaning all the hair off the meat.

I save all my pheasant legs and put them in the crockpot with cider, garlic, carrots, onion and celery for 15-20 hours on low. I then pick out all the bones and strain the juices. Combine all the ingredients and reduce till a consistency of a really juicy pulled pork. Serve over egg noodles or rice. Would squirrel work the same?

I've had squirrel like that before. Probably one of my favorite ways to eat it.

Yup. I'm too lazy to eat it like that though.

I don't. Try skinning one without cutting through the tail and up the back.

I don't cut up the back, but I do cut the tail. Although what you said is almost the same as saying "try skinning one without a knife- those bastards are hard to skin." Don't make no sense.

The air compressor trick works great on hogs. Skinned out many that way.
