So I'm having a few people over on saturday for a BBQ and general drunken shenanigans. I bought an 8lb pork shoulder and a couple racks of ribs to throw on the smoker. I am not very experienced with the smoker but it always turns out pretty good. This time I'm going for better than just pretty good.

My rub has paprika, salt, brown sugar, cayenne, some coffee grounds, feels like I'm forgetting something...

Anybody have a good rub recipe they want to share? How about a BBQ sauce? Don't really feel like going to all the trouble of smoking all day and topping off my pulled pork with store bought sauce.

BBQ sauce- Tomato sacue, 1 dry ancho chile, 2 dry d' arbol chiles or cayenne, black peppercorns, 2 colves, salt, 2 bay leaves, 1 chopped onion, 1 chopped bell pepper, 1-2 stalks celery chopped, 3-5 garlic cloves rough chopped, 1-2 chiptoles depending on heat, fresh thyme, red wine or apple cider vinegar, brown sugar, (molasses, honey, or maple syrup your choice).
Put chiles, bay leaves, herbs, garlic, onion, celery, bell peppers, chipotle, peppercorns, salt cloves in skillet and saute until cooked down pretty good. Add in tomato sauce, vinegar, sugar and which ever you picked between the molasses, honey or maple syrup. Bring temp up to small boil then reduce to simmer. Stir occasionally to keep it from sticking. An hour later, blend the entire mix to a smooth sauce like texture. Put on smoker or skillet, let simmer and reduce until thick enough foor the sauce you want. Taste, you may need to add water, vinegar, sweetner(what ever you used) or seasoning of some kind. Remember on seasoning, you can always add to it but you can't take it out. The longer you let it simmer, the stronger the flavors meld and become.
Rub(that goes great with that sauce)- Thick cut kosher salt, brown sugar, ground ancho chile, ground d'arbol chile or cayenne, dry thyme, dry oregano, paprika, chile powder, ground celery seed, ground corriander seed.

Loving it, thanks for asking. You don't have to have the dried chiles. Can subsitute regular chili powder and cayenne instead and the same with the black peppercorns, you can use regular ground black pepper.

Ok, here's what I did. My rub: half cup brown sugar, half cup paprika, three tbs salt, about a tablespoon each cayenne, chipotle, cumin, mustard, coffee grounds, pretty much anything I had on the spice rack. Tasted pretty much like my usual rub.

I just made a sauce based on yours reb, with a few substitutions for what I had on hand. Onion, garlic, cloves, bay leaves, celery, cayenne, chipotle, salt, pepper, tomato paste, no apple cider vinegar so I used some balsamic, brown sugar and molases. It tastes pretty good, gonna let it simmer for a while. It's hot, sweet and sour :thumbsup: I might have to have a bottle of bulseye handy for the pansies :D

Sounds good. If it's too much of hot, sweet or sour you can add water to it and let it simmer out. If it's not liquidy or tomatoy enough you can add ketchup. I use tomato sauce but ketchup can work in a pinch.

I let it simmer a bit and it tastes just right to me. Excited to see how it all comes together tomorrow.

Awesome. :thumbsup: If you're making pulled pork sammiches with the shoulder, try it with some sweet and spicy pickles if you have em. Goes really good together.

All I have is dill, but with the amount of cucumber plants I have so far, pickle making might be in my future. I'll look up a recipe when the time comes.

The first thing you should do is coat the entire shoulder with mustard. You will be amazed at how that works out for ya. It holds the moisture in and tastes good. I use a brush or latex gloves.
