Not the healthiest in the world but its awesome.

Melt 4 tablespoons butter in a pan.
Cut one large onion and cook till tender and translucent on mid heat add salt and pepper to taste. Then add 1 cup cream. Reduce the sauce around about halfway on mid to low heat." Make sure not to burn it." Then when the sauce is done. Add in
1/2 cup crumbled blue cheese. Stir and melt the cheese. Lay a bed of the onion and blue cheese sauce on your plate. Then put medium rare grilled deer steak on top of the sauce...... sauce is also great on a bake potato.... recipe work with beef steaks also.

If you are feeding more then two people just double the about of ingredients used.

I do something similar but cook onions, garlic, thyme and rosemary with a little bacon grease. Cook it kinda dry so that I can deglaze the pan with a little white whine. Let it reduce half way then add a little heavy cream and a little creme fresh, let thicken and add bleu cheese.

Its everything you'd put on a taco, but piled on a baked potato instead.

But i like your idea too.

Looks like striper bait. Boot probably has the recipe.
