Back in the 90’s, I had quit soft drinks for 10 months and lost 13 lbs. it was the only thing I did differently, so yeah sugar puts weight on you. These days I’m just fat and happy, except for this damn carpal tunnel waking me up at night.

You bumped that recipe so maybe I better thaw out a duck. She will take a hint.
Some of you bastards can count so no freezer shot.
If you package it right eating a 3.5 year old duck is no big deal it'll be fine.

Roasting mallard means it was shot in the head or very few to the body.

Hehe it's that easy but first you need to kill a mallard and pluck it and wax it good.
Skin on or forget it.

Step one is to brine it overnight.

I think the veteran duck eaters would prefer it to be less cooked than we do it.
If you want it still bloody a little then for sure the way we do it is over-cooked. I'll use a thermometer which is something we never do.
Might be able to improve on her recipe.

That recipe started out as my grandmother's but my wife tuned it up.
So it's a South Dakota recipe in a way.
Not Cajun, Coonass, or Creole. :lol:

Usually we use hot sausage.
Medium was all they had maybe.
Might throw a little bit of duck in there.

Can do this in camp on a small fire. It's easy.

For sure this is different than zatarains.

This brand seems a bit earthier smelling in a good way.
I haven't tried the Oak Grove yet. That's next

We ate all that jambalaya girl.
Wife looked this over and said we need to make it but it's for a big family so we'll send most to our daughter.
She has 3 boys and a girl.
Says 3 # of meat. Hm that's not enough.
I'm thinking 8 ounces of smoked sausage and 8 ounces of the spicy sausage and
Pound of shrimp
Pound of duck meat (maybe more)

Anything else?

Oak Grove next but not today yet.
Maybe for the weekend or something.
