I am cranking mine up today. St Louis style cut on this slab. Notice the membrane has been removed.

Will do. I tried last night, left my rods unatended for half an hour thinking if anything bites, they'll swallow the hook as eels usually do. When I came back, I had all six minnows gone. They're gettin threaded onto the hook real good tonight.

I've never had them smoked but heard they were a delicacy. A Dutch guy down the road makes them all the time. I looked around on google for brines and times/temps and it looks pretty straight forward

Eels make great fishing baits.

bark, flavor and smoke were spot on, had company and couldn't wait, had to pull it at 180, like to take it to 195. Still better than what you'd get at any Kansas City BBQ joint I'm sure but not up to Michigan standards ;)

I don't understand the trouble for one rack of ribs. Why not three or four and eat on them a couple times...

The finished product was really good. Maybe not by Fortuna CA standards, bit plenty good enough.

Very good table fare, firm meat member of the mackeral family. This one came from Panama City Beach.

Figured you would like this pic better than a standard Wikipedia photo.
