I've cooked them on an open fire before and they had a nice smoky flavor. Must be great on a smoker

It's been cleaned, deslimed, given a good sprinkle of salt and left ovenight to "brine". It is now airing out in the fridge to dry a bit for the day. Chicken thighs with cherry smoke tonight and the eel goes on the leftover coals afterwards. I think I'll use alder.

The eel is more of an experiment, I don't plan on eating all of it tonight, although I might :)

Yeah and it's actually ptetty small. If it turns out, I'll have to stock up on big silver eels when they run in the fall

Could be but in my eyes the time/size to satisfaction ratio is off for me. For a meal I'd pick a different water creature from the list to take.

Firmer than catfish. Not like chicken, but close. Sort of like mahi-mahi texture, if you've had it. To me, it tastes like mild canned tuna fish, but I've never had it smoked.

DISCLAIMER: These were Korean eels, cooked on charcoal grates on the street carts, and 150 of the 200 times I've ate them I was hammered.

Only time Ive had eel has been at Sushi place and its delicious. Tastes like a bbq flavored fish
