I am interested in smoking chickens, cornish hens, etc.
Have not done a lot of it, but its cheap and quick, and they turn out great.

Those chickens I made were awesome. Just flat awesome. Let me know before you try it, and I'll give you the marinade/brine recipe. I let them soak overnight.

Here it is:

1/2 cup oil
1 cup cider vinegar
5 tsp salt
1 tsp black pepper
1 tsp poultry seasoning
1 egg, beaten

I multiplied it by 4 when I did 3 chickens and had plenty. In my opinion, it's tough to marinade a whole chicken cut in half with the original amounts. Need a little bit more. I put my half chickens in a ziploc and dumped in marinade, shook them around, and put in the fridge. Flipped them before bedtime. Cooked at 225 for 2 hours (1 hour per side), then flipped for one more hour until I got to 170 at the thigh joint. I think next time I will wrap with foil for the last hour.

Are we still talking about brining oysters in salty water, after they've been picked from salt water?

Makes sense.

Had to be at least as much salt in the brine as sea water though to keep things right

Never heard of it, but I was mostly being a smart ass. I've seen your cooking resume in detailed threads and pictures. No reason for me to doubt it.

I prefer them fresh picked, then steamed on an open flame. mmmhhhmmmmm

I was wondering the same thing, but then when I saw the ingredients it made sense. But I'm not a fan of steamed oysters.

Not a fan of them steamed either. They're good, but I find them better raw or breaded, fried and made into burgers with homemade tartar sauce.

Fine, I'll throw a pork roast on there real low in the morning and see what it looks like when I get back home. Maybe wrap it in foil at lunch time. Outdoor slow cooker!
