Why Red, whatever do you mean?

They turned out good. They were real juicy with a light smoke taste. The cool thing about the brine is you don really taste it in the meat. It was all light smoke flavor. I only used charcoal, no special wood or anything. Neighbors liked them.

If you do it right, I dont think you need to. My fire was hotter than I wanted it to be, so I fliped them after an hour, wrapped them, and flipped them again.

Really juicy and tender, tastes good.

Glad you liked it. Some don't care for the "vinegar", but pickling the chicken first makes it stay juicy.

If I use mustard, do I use the regular rub over that, or do I need to adjust it some? I'm picturing the taste of brown sugar mixed with mustard, and I gotta say, it doesn't seem too good.

Assateague, the mustard taste really good when its cooked, it forms a dark brown seal, keeps moisture in. It dont taste at all like mustard after its cooked. You are gonna say 'damn thats good" when you do it, then you wont ever do it any other way. I coat it on really thick myself.

I have gotten where I just put the mustard all over it and sprinkle rub on it later in the process, after it has been flipped.

Wait, are you doing ribs? I only do the mustard thing on pork butt, brisket, or ham.

I have never tried it on ribs.
