Well I definitely made an UGLY drum smoker today.
Didn't use a food grade barrel but this thing has been sittin up in the hay loft for longer than I've been alive so I doubt any chemicals are still hanging around.

These are what I used to secure the valves gona have to go back with jb weld to keep them from wobbling.

Couldn't find expanded metal that was big enough so for now I made this basket out of an old grill grate and rabbit cage wire. Hope it doesn't melt.

Got two weber racks. The bottom one is so I can put a pizza pan on for a heat diffuser I plan to put another rack right on the top line and get a dome lid for it in the future.

And the test burn.
Damn thing flared up to 600 degrees with both valves open got it down to 300 right now but it ain't smokin its grillin and I need it to stabilize at 240. This is the hard part. More to come. My first actual cook will be Thursday. Two pork butts and a tenderloin.

I just got done putting a chicken in Assa's marinade. I'll report back tomorow with my results.

When I cooked my ribs this weekend I noticed the temp rise when I took the lid off. Closed two of the three valves and after a few minutes it'd drop back to where I wanted it

How much charcoal is in there and how much of it did you light? That might be part of or all of your problem. I light a dozen coals in a coffee can that has both ends cut out, pile charcoal around the outside of the can then pull it out, leaving the lit coals at the bottom center of the pile. The fire will spread as you cook.

I'd estimate I put 12 pounds in there. But the problem is its kingsford match light. So it all lot at once but it's just what I had lying around so inused it as opposed to wasting good shit. Was just trying to play with my valves and see if I can control temp. I'm gona have roughly 5 thermometers when I do my cook. One in each peice of meat the main thermo on my uds and another oven thermometer on top of my exhaust hole in the lid. Between those I'm thinkin I can find a median temp and get this pork cooked right. I'm going to use proper coals and light them using the flight control coffee can method on my cook though.

I made the mistake of using matchlight once. Never again, everything tasted like lighter fluid. It works good to get the first dozen coals going though.

coffee can or just go buy a chimney charcoal starter they only cost 10-20 bucks have a handle and are a breeze to use

I killed two potential UDS candidates a few days ago. A few .22 shots in the gut section and they are now genuine burn barrels. Sorry guys, My needs are different, plus they are laying around everywhere here.

The chicken using Assas marinade was a deffinite keeper. I'm tempted to try it with lime juice next time instead of the vinnegar. Assa, maybe you should post it in the recipe forum so we don't need to dig through this thread to find it.

That might work very well, actually. Never thought about substituting, but I do run out of cider vinegar quite frequently. I have access to a ton of limes, though.

I'm not a huge fan of cider vinegar. This was really good, but I instantly thought of lime when I took that first bite.

I remember the trees on the drive home were a spectacular shade of blue, I had the taste in my mouth the rest of the day, and burped diesel for another day or two.
