I like my burgers medium well, just a hint of pink, don't like the texture of a rare burger

Filet I can eat cold in the middle, hell I've had some damn good tartar of filet, ribeyes and porterhouse I like medium rare

The grower is one of my customers - have no idea who cut it. He just called me and told me to come pick it up. I know it hung for 16 days in a cooler, it's pretty well aged.
