My wife could eat it every day of the week. She keeps it under control now but I've still ate more meals of it than I care to count. Plus, it's not skrimp, scallops, and crawfish etouffee!!!

I make specklebelly gumbo but don't see why you cant sub a big Canadian.ill work on getting you a recipe from makin the roux to spooning it on rice and as with any gumbo you gotta have a side of potatoe salad
