Last time I made em I soaked, then cut a "pocket" in the chunk of breast and stuffed with a mixture of chopped jalapeno and cream cheese, wrapped with bacon and cooked.
The cream cheese seemed to disappear while being cooked, is that just the way it is?

I saw in the pic one of the guns posted he had a piece of jalapeno hanging out, do you guys quarter it and put a gob of the cream cheese in there? Anything else in there?

I lay mine out, put the cream cheese and sliced jalapenos (the ones in the jar) on it, roll em up and then wrap it all in bacon as tight as possible. Cream cheese has always still been there.

We cut the breast into bite sized pieces. Slice the jalapeños, if we're using fresh. Or get 1 from a jar. Plop some cream cheese in between the jalapeño and breast. And wrap it up tight.

I cut the jalapeno lengthwise. Scrape the seed out. Cut a hunk of cream cheese to fit in the jalapeno, then cover that with a piece of the breast. Wrap in back, and grill...

You could probably do the same using the breast as the cavity, rather than the jalapeno.

If cooking them this way, I would not use a cream cheese mixture with jalapeno, I would try to use a chunk of the pepper to "protect" the slab of cream cheese from melting out completly...The jalapeno can become a "door" to keep the cream cheese inside the breast, with the bacon holding the door in place.
