Making a double batch of chilli with half ground beef and half ground pork - smoked the meat over mesquite before adding it to the pot. It smells fan-freaking-tastic right now.

I have to try this. Do you smoke it until it's cooked all the way or just enough to integrate flavor?

I make a large party out of the whole 1lbs package. Smoke it over heavy smoke for 2.5 hours. Then I chop it up an throw it in the crock pot with the chili.
My recipe is as follows:
2 jars Heinz chili sauce
1 package McCormick hot chili mix.
1 can kidney beans drained
1 can black beans drained
1 lb smoked ground beef
1 large onion chopped
1 can diced stewed tomatoes
Cook about 5-6 hours in crock pot.
