Kimchee

Postby jehler » Fri Jan 17, 2014 2:59 pm

Ate a bowl for lunch, never had it before. Maybe it's all in my head but I swear I can feel it making its way through my guts, picture pulling a 3" ball of steel wool through a 2" pipe with a string. I hope this ends well?!?

I have no idea what Kimchee is, but the Google description sounds terrible...

Kimchi, also spelled kimchee or gimchi, is a traditional fermented Korean side dish made of vegetables with a variety of seasonings. It is often described as "spicy" or "sour".

Koreans bury cabbage with whatever spices and veggies in a sealed jar for months letting it ferment. Tried it once in Korea while there in 75...never had the urge to revisit that culinary delight.

You know that happened on accident the first time, someone forgot about a jar of cabbage and decided they would eat it anyways when they found it a couple months latter.

Eskimos do the same thing with fish heads. Fish head soup.
Never was fucked up enuff to try some but did get cornered into trying eskimo iced cream.
Cold instant mashed potatoes with berries in it. Awful.

In the south there is a recipe for squirrel head stew. Same thing. Bury the heads a couple weeks/months.
Yuck!

Always heard assa talk about it and saw some at miejers so I grabbed it. Different but quite pleasant tasting, smell and texture take some getting used to but I can tell you the jar ain't gonna last a week. Still have the god damn gout lingering, take red meat out if your diet and it's a struggle to stay full and not get burnt out on certain foods

Yes. Cucumber kimchi is the best kind, but both are good.

foods low in purines is what gout sufferers should be eating

High-purine foods

Anchovies, sardines, scallops, and mussels

Tuna, codfish, herring, and haddock

Wild game meats, like goose and duck

Organ meats, such as brains, heart, kidney, liver, and sweetbreads

Gravies and sauces made with meat

Had the hot Asian girl at work hook me up with some kimchee. Once I get my knee healed up and I can get off the couch I plan on making some kimchee soup to try it.

Love that stuff. You will now develop periodic cravings for it.

Try this one:

Make some sticky rice, about 4 cups cooked. (We use leftovers from the rice cooker, so not sure how you'd go about this)

Chop up 2-3 cups of kimchi, sort of coarse. Biggest pieces maybe the size of a buckle.

Put some oil in a skillet and get it hot. Throw in the rice, throw the chopped kimchi on top, and fry it quick, sort of mixing it up.

When it's hot, take it out. Then fry up a couple runny eggs and put on top. Cut them up and let the yolks run all through it.

Deeeeeeelicious.
