The science of "brining" is complex. The best explanation of what's going on...was on an episode of America's Test Kitchen. I love that show and their science guy is amazing. Explains how it works.
Another part I really like is when they compare and critique cooking items like gadgets or brands of cheese etc.

Its a very good show if you want to learn more about cooking.

That's where they said most of the nutrients come from. What I read was about the Eskimos and their diet.

From what I understand if you eat the meat and also the internal organs along with the brain. It will give your body the proper nutrition to survive avoiding scurvy..... who know if you where in a survival situation or something.
Who really runs the prison? The inmates or the guards?

Will do. Didn't follow a recipe, but will explain the best I can. If going to use a goose leg, I would slow cook it for quite a while, then finish in the sauce, they have to break down for a while to get tender.
