Try adding a little crumbled up bacon on top a few minutes before you take it out of the oven.

I've been planning to do it with breakfast sausage and cream cheese, instead of beef and cream of potato.

I make one on Sunday mornings sometimes out of breakfast stuff that the kids like.
In my cast skillet I start a layer of hash browns about an inch and a half thick cooking, spread out chopped up (cooked) bacon and or sausage then pour in about 10 eggs scrambled. Put a lid on and cook med low for about 20-25 minutes. Long enough to cook all the egg, but try not to burn the hash browns. A couple minutes before its done I put a layer of grated cheese on top. Sometime I'll throw it under the broiler for a couple minutes if the eggs are cooking slow. Slice it like a pie and serve with sausage gravy or salsa on top. The kids call it Pig Pie.
interesting, somewhere between gorp and quiche, gonna have to lake some pig pie, be good with spinach and feta

We do something similar out at hunting camp. We call it farmers breakfast because when I lived in Germany they had farmers fruhstueck (SP?)
I cook a pound of bacon. Then use the bacon grease to cook a big ass pan of taters. Throw in onions and sometimes wild chantrelle mushrooms as the potatoes are getting near done. Then I crack 1/2 dz or more eggs over that and keep them scrambling. When it is done or near done throw a pile of sharp cheddar (grated) on top and stir it all up. Quackhead usually puts about half a jar of salsa on top of his plate.
Whoever gets to do the dishes is soaking and scrapping to get that out. :lol:
