Pheasant and quail in a bourbon & garlic mushroom sauce. Will plate over garlic butter noodles.

Didn't have a recipe, kinda winged it, used the bourbon when I realized i had no wine. Regardless, it was fuckin awesome.

Pat the meat dry, coat with flour and garlic seasoning. Brown well in olive oil, place to the side on paper towels. Deglaze pan with bourbon,or white wine. Add butter and mushrooms and some crushed garlic to the skillet, saute til they start to change color. Add flour then slowly mix in cream, or I normally use canned milk. Keep temp down, this will burn easily. Place birds back in the sauce until finished cooking.

It's good, nice break fron the standard fried or grilled birds.

Been many years since I've had beef stew, always dug it. Try adding a kielbasa while its stewing, does wonders.

Think it would piss DH off if I told him that Lee's famous recipe is better than any chicken out there? I grew up in the land of colonel sanders and his ain't got shut on his family members restaurant.

Cool man. I got a bunch of valley quail and chukar in the deep freeze. Im gonna give this a go very soon.
