You're wasting your breath Rick. We covered the low and slow thing here, several times. He's either very slow to catch on or, he just doesn't listen.

Fuck you man, you've been trying to start shit with me for a while, and I don't even talk you.
I could out cook you any day bud.

Nah, that's all i got to say.

You're too easy, you take the fun outta it. Relax, we're online, it's not real life.

I haven't seen the sun since November, I can see in near pitch blackness, I sleep in a polar bear rug, my igloo is my home, my girlfriend smells of herring and steam comes out of it like when a whale breaches...

Hot and Fast is kinda the newest thing on the scene on the professional circuit. You can achieve the same tenderness a lot faster using foil and higher heat with less time over open smoke. Ill agree the low n slow is better. My baby backs take 6 hrs at 225. But all I have to cook on is a trash can smoker. So if I wanted to do more than three racks at once I need to figure a way out to speed it up. My post wasn't even about cooking times. It was abt how spare ribs suck. I've done them both ways now and still shitty but my back ribs always turn out A+.

Flint...try smoking the ribs an hour and finishing them in the oven covered in foil.
There is no way to make fast ribs that fall off the bone, Lord knows I tried.

Or, if you don't like AB's method and don't care if the people you're feeding talk shit about your grits, just drop it in a pressure cooker for 40 minutes at 15 psi and then throw in the can for an hour of smoke.

That's waaaay cheating. I was just fuckin around with the hot/fast today. I can cook the hell out of traditional low/slow bbq but its also fun to try new stuff.
