Assa's deer roast formula is in the pot for this evening's supper. And starting to smell pretty good. Couldn't find the peppero-what'sit peppers and added a some water, so if it sucks, I'll take the wrap. 'Course, if it's good, I'll take all the credit, too.

My roast was much smaller than what his recipe called for. I also cooked it 45 to an hour longer. You should be happy with it.

My BBQ secret to tender and smoky is to smoke first then finish in a cake pan covered in foil.
If you have to use sauce do it right before serving and broil it a bit.
Ribs, steaks, pork whatever.

Like you, I used a smaller than 4lb roast, a bottom round, but it came out about as well as deer roast can in terms of dryness, perhaps because I added water. (I'll usually inject our deer roasts with Chachere's garlic and herb marinade to help take the place of beef's fat marbling but forewent that step to see what the TI dressing mix added to the flavor.) Anyway, we found it a nice change but aren't ready to toss out the injector.

Those injectors worthwhile? I don't keep many roasts, usually just the two small ones, but have always wondered if they would help keep them moist, or just add flavor.
