So what do you ask for? Do you just say "I like pollo, hook me up with something authentic"?

You gotta ease in to it. Tell them you can't find what you want on the menu and then when they ask you tell them tacos de lengua, tortillas de maize. Then they bring out the fixins. Onion, cilantro, pico, lime wedges, and tomatillo. They get it.

I feel like this is accompanied by a wink and slipping the waiter a few pesos.
