Deep fried (with a side of new potato slices done the same), but Sweet Chereaux nailed it and even the feet are tender and juicy.

There are a lot of tilapia and shrimp farms in the southwest part of AZ.

Didn't even know it was possible to farm shrimp out there. All mine come straight from the gulf.

Grilled some steaks from this Mako last night. Marinated them in olive oil, salt and pepper and a little garlic powder. Outstanding !!

Or they are dealing with a long drought, plus the coldest winter in years. There was a big die off in ponds and they don't have a boat to get to better water.
