Honestly not much but I did like the stuff I have tried. I have never made them or had it made at a butcher shop. But such a windfall of meat of that degree would be alittle over the top and snows not being the greatest quality of fowl. I'd try and experiment with it. Make some breakfast sausages, some jerky, some pepper sticks, leave a few for whole body roasting/ smoking, and keep some breast and leg meat for other recipes.
