The rib pictures I posted are St Louis style. While they are not baby backs, the "big ole joint section" has been cut away from the rack, rendering it lacking in "all that grissle and shit".

No St Louis style spare rips in The Wolverine State?

trimmed spare ribs(st louis) have lots more meat and i think taste better then baby backs

It's not much effort at all. Takes 10 minutes to get the coals going, then about 10 minutes to get the heat right. Then in they go. Check them in an hour. Check them in another hour. Another hour. And another. Then eat. I got my grass cut, my garden weeded and re-rototilled, the barn cleaned up, tinkered in the shop, and planted some more green beans and beets.

It's actually quite genius- it takes you off of the "honey-do" or "honeycanwegoto" schedule for at least 4 hours.

Barrel was the hardest thing to find for me. Took forever. For the record, it doesn't matter what it had in it, since you're going to burn it in an insane fashion for a few hours, anyway. I will in the future, now that I know how much we can eat, and how well it lasts in the fridge. I don't get it. That stuff off the smoker, when put in the fridge and taken out the next, doesn't get dry like damn near everything else you do that to. A mystery of modern science, it is.
